Here on the Cultured Planet fermented foods are a way of life. Parties form around their creation and communities network around the topic of healing arts. Many of us practice yoga (with Dorie Silverman, doriesilverman@yahoo.com) and arrange to include traditional chinese medicine (with Jin Hong Ngan,www.acujinhealth.com)into our approach to wellness. We also believe that diet is everything and with good reason--Over 80% of the immune system resides in the gut. It makes sense to start there in our quest to preserve and enhance our health. This is the reason that the Body Ecology Diet has been receiving so much attention. It rests on a foundation of fermented, or cultured foods which have been called the nutritional "missing link" in the American diet. Ancient and traditional societies knew the importance of regular consumption of fermented foods because of the amazing job they do to detoxify, strengthen, rebuild and energize the body.


The Body Ecology Diet draws upon seven principles that make eating a fresh activity and a new lifestyle. Once mastered following the principles helps us to correct digestion and keep us on the road to optimal health. Kefir Making Class

  Fermented (cultured) foods. Why are they needed--what do they do (cleanse, digestive aid, mineral retention, energy to adrenals, enzymes to all body functions)? How do they help us meet our health goals (helping to correct digestion, prep for flu season, curb sugar cravings, healthy fast food in our fridges)? How do we make our own? What flavors can we make?
  Join us to create the signature drink of the Body Ecology Diet, kefir made from the water of young green coconuts. We will also make the "pudding" using the spoon meat from the drained coconuts. Learn the process starting with coconut selection, cracking coconuts and blending in the kefir starter. You will leave with a small sample of either coconut meat or water to kefir on your counter. Handouts included.
